Dynamic intermediate proofers
Salva's IC dynamic intermediate proofer is designed so that the dough pieces change baskets several times during the resting time. It is also suitable for working with highly hydrated dough pieces. The high density nylon buckets are designed to prevent sticking even with the most hydrated dough pieces.
CHARACTERISTIC OF DYNAMIC INTERMEDIATE PROOFER
Normally, the dough works by tension and relaxation. For this purpose, after the tension generated in the dough division, a rest period is necessary to avoid tearing of the dough.
The dynamic intermediate proofer serves to automate this resting process prior to forming, allowing the resting time to be adjusted to the requirements of the dough (generally 10-15 minutes of resting time).
Maximum nest capacity: up to 700 gr. (extendable up to 1350 gr. by reducing the number of nests).
It can work with hydration percentages of up to 75 % (*).
Discharges the pieces 1 by 1.
Electric flour milling machine
Possibility of front or rear left or right loading on request. Standard front entry and exit.
Finished with INOX lids.
Ball drop from lower height to avoid tensioning the dough by means of inclined tile.
Special chain: oversized pitch between links to avoid chain jumps.
Equipped with nylon baskets with high density mesh: they allow working with doughs hydrated up to 75% (approximate data, depending on the flour and additives), avoiding the appearance of mould as in the felt ones.
